* A Dandelion Wine Recipe
Makes 1 Gallon * Ingredients * 7 cups dandelion petals, 1 gallon HOT water, 1 1/2 lb. sugar or until Specific Gravity is 1.085 to 1.095, 1 cup white grape concentrate, 3 1/2 tsp. Acid Blend Powder, 1/4 tsp. Tannin Powder, 1 Campden Tablet, 1/4 tsp. Yeast Energizer, Wine Yeast.**We suggest a Starting Specific Gravity of 1.085 to 1.095 for 11% to 12.5% Alcohol by volume potential. **Method - It is most important to use only the petals - NO GREEN. Put straining bag into the primary fermentor. Place dandelion petals into the straining bag and pour BOILING HOT water over them. Add the sugar to the hot liquid. When the liquid has cooled to about 80 degrees F crush campden tablet and add with all remaining ingredients EXCEPT wine yeast to straining bag, and tie securely. Cover with a plastic sheet. after 24 hours and when the must is below 75 degrees, add yeast. Ferment for three days after fermentation first becomes apparent, or until Specific Gravity reaches 1.040. Strain off dandelios. Press, and rack into a one gallon jug. Attach a fermentation lock. Rack after the first week, then one week later and again in two weeks. Rack every 2 months until the wine is clear and no sediments are formed on the botom. When wine is clear and stable, bottle. Before bottling, add 1/2 tsp. of anti-oxidant powder per gallon. Age 6 month or more. Enjoy! Recipe from Mary's Recipes.

Acid Blend
Acid Blend is a combination of citric, malic, and tartaric acids used to increase the acidity of wine. Usage varies depending on the acidity of the wine or must.
An Acid Test Kit should be used to determine the acidity and usage.
Acid Blend is a blend of the three most common acids found in fruit: citric, malic and tartaric. It is typically used in wines that are naturally lacking in acid. Wines too low in acid are flat tasting. Acid Blend adds a liveliness to the wine and helps to bring out it`s fruity flavors. Also, having the proper level of acidity will help to establish a vigorous fermentation. Before you add any acid to a wine you should first check its acid level with pH Strips or a Acid Test Kit. Or follow a reliable recipe.

DIRECTIONS:
Before Fermentaton: Dissolve the required amount of Acid Blend directly into the wine before the yeast is added. Titration readings taken with an Acid Test Kit
should be about .55%-tartaric for a proper fermentation. Readings taken using pH Test Papers should be about 3.8 to 3.4. One level teaspoon of Acid Blend will raise the acid content of on U.S. gallon by .15%-tartaric.

At Bottling Time: Sometimes wines will not taste their best, even when they are at their opimal level of acidity and may require a slight final acid adjustment to taste. This can depend on the wine`s character and your personal taste. To do this, first put measured amounts of Acid Blend, by taste, in a quart sample of your wine. If you add too much to your sample, blend it back into the batch and pull a new sample. Once the dosage is established, add that dose to the entire batch.

INGREDIENTS: 33% citric acid, 33% malic acid, 33% tartaric acid.

Acidex Super-K Tartaric Acid Reduction Powder
Acidex Super-K is a brand new, simple-to-use tartaric acid reduction powder. It works by neutralizing, accelerating the formation, and precipitation of naturally occurring tartaric acid crystals, a.k.a. “wine diamonds,” present in high acid wines. Acidex Super-K contains Potassium Bicarbonate and Potassium Bitartrate and is used after fermentation and does not alter the structure of the wine. It does however, slightly raise potassium levels and increases the pH of the wine to between 3.2-3.6.

ACTI-ML
ACTI ML is a nutrient supplement developed by Lallemand for helping Malolactic cultures successfully ferment in harsh or low nutrient conditions. Acti-ML is still the nutrient of choice to re-energize stuck or sluggish ML fermentations. (Please note that if you use ACTI- ML in the hydration phase, unless your fermentation is problematic, it is not necessary to add it to the wine at the beginning of fermentation.)

Cellulose was chosen as one of the ingredients for this product since it is slow to settle and will aid in keeping the bacteria in suspension.

Amylase Enzyme
New size 1.5oz. Amylase Enzyme converts startches to fermentable sugars, ensuring complete fermentation. Amylase Enzyme - 1 oz. Used during the mashing process to increase enzymes. Increases efficiency and reduces conversion time by rapidly reducing insoluble and soluble starch by splitting starch molecules into many partially-fermentable dextrins and maltotriose. Given a long enough "rest," the amylase can dismantle all the dextrins to maltose, glucose, and small, branched limit dextrins.

Opti-Red
An inactive yeast product which improves body, color stability, and mouthfeel in red wines. Using Opti-Red in the must makes polysaccharides available to complex with polyphenols as soon as they are released. This early complexing results in red wines with more intense color, rounder mouthfeel and better tannin integration. Use in conjunction with Lallzyme EX for best results. We think the affect is very similar to using D254 yeast which has a high degree of polysaccharide-tannin complexing. Use at the rate of 1 gram per gallon of red wine. Dilute Opti-Red in 4 times it weight of water or must and add at beginning of fermentation.

Pectic Enzyme Liquid
Pectic Enzyme physically destroys pectins, which constitute the "fleshy" part of most fruits such as grapes, and apples. Adding it to a wine must will break down the pulp, making pressing more efficient. Adding it to red grape must will aid in the extraction of tannin from the skins. It can also abate pectin haze in wines and cider. Liquid Pectic Enzyme is added to crushed fruit to increase juice extraction.
Pectic enzyme increases juice yields and eliminates pectin haze from wines made from pectin rich fruits. Useage: 1/4 teaspoon per 5 gallons of wine.

Potassium Metabisulfite
Sulfites are one of the most important additives in winemaking. They are used to control spoilage during the harvest and the crush by inhibiting bacteria and wild yeast; they also act as a preservative during storage by continuing to inhibit spoilage organisms and scavenge oxygen. Sulfite solutions can also be used to sanitize winemaking equipment.

Potassium metabisulfite is one of the most important winemaking compounds. It is an antioxidant and bactericide that releases sulfur dioxide into wine must. Use 1/4 teaspoon per five gallons to add 50 ppm. Or, mix 1/4 pound in 1 quart of water to make a stock solution; 1 teaspoon of stock solution in one gallon of must yields 50 ppm sulfur dioxide.
Potassium Metabisulfite is an antibacterial agent identical in use to Sodium Metabisulfite but it does not add sodium to the wine.

Cuts down fermentation time
Increase flocculation
Greatly reduce harsh sulphur notes
Improve the health and viability of yeast.
Reduce levels of diacetyl at the end of primary fermentation
Produce faster, more complete attenuations
Increase yeast production for a better harvest
Improve the quality of the finished product
Recent developments have made Servomyces available to homebrewers and home winemakers. Each packet contains 6 capsules, which can each be used for a 5-gallon (20 to 25L) batch of beer, wine, mead or cider. The instructions are listed below:

Add 1 capsule 10 minutes prior to the end of the boil. OR, If your fermentation does not require a boil, open the capsule and pour in the Servomyces, since the capsule requires boiling to melt.

Tartaric Acid
Tartaric Acid is used to balance the acidity of wine. Tartaric Acid is the primary acid found in fruits such as oranges, lemons and pineapples. It is typically used in wines that are naturally lacking in acid. Wines too low in acid are flat tasting. Tartaric Acid adds a liveliness to the wine and helps to bring out it`s fruity flavors. Preferred Acid for fruit wines is ACID BLEND unless otherwise stated. TARTARIC ACID is preferred for Grapes. Also, having the proper level of acidity will help to establish a vigorous fermentation. Before you add any acid to a wine you should first check its acid level with pH Strips or a Acid Test Kit. Or follow a reliable recipe.

DIRECTIONS:
Before Fermentaton: Dissolve the required amount of Tartaric Acid directly into the wine before the yeast is added. Titration readings taken with an Acid Test Kit
should be about .55%-tartaric for a proper fermentation. Readings taken using pH Test Papers should be about 3.8 to 3.4. One level teaspoon of Tartaric Acid will raise the acid content of on U.S. gallon by .15%-tartaric.

At Bottling Time: Sometimes wines will not taste their best, even when they are at their opimal level of acidity and may require a slight final acid adjustment to taste. This can depend on the wine`s character and your personal taste. To do this, first put measured amounts of Tartaric Acid, by taste, in a quart sample of your wine. If you add too much to your sample, blend it back into the batch and pull a new sample. Once the dosage is established, add that dose to the entire batch.
