The 5 strains of Lalvin yeast are among the best available to the home winemaker. They have been isolated from different regions of France, and further developed by top researchers for home use. Each 5 gram package contains billions of live yeast cells. Enough to ferment 5 gallons of wine. 71B-1122 Origin: Narbonne Region Ideal for production of wines with a fruity aroma as well as fruit wines and concentrates. Also great for a blush, young reds and late harvest wines. Red Grapes and red long term concentrates. alcohol tolerance 12-14%. For nouveau wines 71B Was isolated by the INRA (National Agricultural Research Institute) in Narbonne, France. 71B is known for making blush and semi-sweet wines with a 'fruit salad' character. Long-lived aromas are due to its production of esters and higher alcohols. 71B also softens high acid musts by partially metabolizing malic acid.
