(Antioxidant Powder) Additives such as ascorbic acid, when added in the right quantities, limit the oxidizing effect of oxygen contact with wine during various processes such as racking, filtering, and bottling. Ascorbic acid (aka Vitamin C) is used as a preventative to stop oxidization (which turns things like apple juice brown).
Add 1 teaspoon per 5 gallons at bottling to prevent oxidation.
