This prized sipper has received early reviews as the best High Gravity recipe in the series to date.  Inspired by the widely acclaimed Founder's 2009 Nemesis, this wheat wine is enhanced with both maple and bourbon infused oak. To fully understand this treasure, see tasting notes below.
 
We're also offering this recipe kit with three different yeast options.  
 
                Use WLP300 (Hefeweizen) to highlight the wheat with a touch of clove flavors
                and a sweeter finish.

                Use WLP007 (Dry English Ale) for medium dryness
 
                Use WLP099 (Super High Gravity) for highest alcohol/dryness

REQUIRED BUT NOT INCLUDED:

3 oz. French Oak Cubes – Medium Toast
10 oz. Pure Maple Syrup
2 Muslin Bags

 
Serving Recommendation
 
Tuliped chalice and at 55 degrees. If served too cold and there is a dominating banana nose to the beer that dissipates as it warms to reveal it's true personality.  
 
Appearance
 
Deep amber with glints of red, medium carbonation, and brilliant clarity.
 
Aroma
 
Vanilla, Bourbon, Maple, Butterscotch
 
Taste
 
Rich and full bodied.  Sweetness completely hides alcohol and compliments the bourbon and maple.  This sips with an ever-changing journey that begins with the slightly bitter hops which then leaves to give center stage to wheat with slightest touch of clove. Hints of bourbon and vanilla then follow as you begin to appreciate the oak aging, but it is very well integrated and free of harsh tannins.  As you swallow the maple is revealed leaving and lingers slightly.

Each kit yields five gallons, and is available with Ready to Pitch Liquid Yeast.  All kits are pre-packaged and pre-measured and come with complete instructions. For freshness and quality, we do not pre-grind grains. Some kits may require additional ingredients which are NOT included, and are noted in each recipes description.
