Making Cordials Using Extracts (Makes 750ml)
5.5 oz.(160 grams) Granulated sugar50-60 Proof Vodka
Pour entire contents of extract bottle and sugar into 750 ml (US 25 fl. oz.) bottle. Fill 3/4 full with vodka and shake until sugar is fully dissolved. Top off the remainder of the bottle with additional vodka and shake until contents are fully blended.
To Bottle: Pour contents into two 375 mL bottles, and top with red caps. Top with PVC seal, and dip top of bottle into boiling water to shrink the PVC seal onto bottle. To apply labels: Be sure bottle is completely dry. Cut label to size, moisten lightly on the back taking care not to get any water on the front of the label which may cause the ink to run. Apply to bottle in desired position. Now you have the perfect gift!
Cream Liqueur Recipe
Some cordials taste particularly nice as a cream liqueur such as Amaretto, Hazelnut, Irish Cream and Raspberry Fruity Shot.
Making your own cream liqueurs is not only more economical, but by using fresh ingredients, they taste better, are smoother and creamier. They also don’t contain emulsifiers, thickening agents or preservatives. By making your own, you also are not limited by what is on the market – you can invent your own recipes! Almost any cordial extract can be made into a cream liqueur. Use the commercial ones as basic guidelines, but feel free to experiment – you will then be able to have your own “special” cordials.
Basic Instant Cream Liqueur Recipe 1 cup sugar2 teaspoons instant vanilla pudding mix1 bottle cordial extract1 ½ cups Vodka or other 80 proof spirit2 cups (1 pint) light cream or evaporated milk Add all ingredients except cream into a blender. Cover and mix on low speed for two (2) minutes. Shut off blender and add cream. Cover and mix on low speed for 5 seconds. Transfer cream liqueur to clean bottles with airtight covers. Store in refrigerator for up to one month. Makes approximately one quart. Serve cold. As with all alcoholic beverages, label properly, use in moderation and keep out of reach of children. Coffee CreamerMix 1 quart Light cream or Half-and-Half with desired cordial extract, add sugar to taste. Store in refrigerator.
