Product Description
Lallzyme EX is a specially formulated macerating enzyme preparation for red and white wine.
USE: Primarily used in red wines for improved color intensity and stability, greater mouthfeel, and enhanced fruity, floral, spicy flavors in wine.
Lallzyme EX can also be used in white wines for increased extraction.
WHEN TO USE: Add with your other additions prior to the onset of fermentation.
Package sizes - .8 grams (sufficient for 5 gallons)

DOSE: Hydrate with water and add to must.
Based on the activity of a blend of cellulases, hemicellulases, and pectinases, this preparation aids in the extraction, then stabilization of water soluble phenols found in cells of grape skins. Lallzyme EX is specially formulated to improve color stability and enhance mouthfeel in reds. EX can also be used during skin-contact maceration in whites to increase the complexity of wine and improve press yield.
To use dissolve Lallzyme EX into a sufficient amount of water (usual ration is 1:100) and add to must along with your other additions prior to onset of fermentation. Available in .8g package sufficient for 15 gallons.
