The 5 strains of Lalvin yeast are among the best available to the home winemaker. They have been isolated from different regions of France, and further developed by top researchers for home use. Each 5 gram package contains billions of live yeast cells. Enough to ferment 5 gallons of wine.
Lalvin EC-1118: Extremely low producer of foam, volatile acid and hydrogen sulfide. Ferments well over a wide temperature range (50° - 86° F) and demonstrates his osmotic and alcohol tolerance (up to 18%). Good flocculation with compact lees and a relatively neutral flavor aroma. Use for all types of wines including sparkling, late harvest wines and cider. An excellent choice for champagne and dry whites.
