The 6 stains of Red Star yeast have been isolated from different parts of the world - California, Germany, France, etc. They are packaged in 5 gram sachets that are sufficient for making 5 gallons of wine.
Pasteur Champagne: Particularly strong yeast strain with a very high alcohol tolerance (up to 16%). Low volatile acidity. Good resistance to low temperatures. Offers body and roundness thanks to its high glycerol production and promotes the development of fresh and clean aromas. Use for high alcohol reds and whites as well as sparkling wines. Also useful for restarting stuck fermantations.
