The variable capacity tank completely eliminates all ullage (air space at the top) by means of a sealable lid that literally floats on the surface of the wine. The lid is sealed airtight by means of an inflatable gasket. Thus the tank is always full and your wine is protected from surface yeasts and oxidation. 18/10 Stainless Steel (aka 304 Stainless)

Each tank is 100% 18/8 - 304 stainless steel. They come complete with lid, a rope to remove the lid, gasket, fermentation lock, inflation pump with gauge and air hose to the gasket, and a standard threaded spigot valve on the base of the tank.
