2.5 Gallon Barrel Beer Recipe Instructions
In general:
* All beers are brewed at room temperature. The beers will brew in 5-7 days, and should be bottled within 10 days.
* Corn sugar or malt should be used for added sugar. Cane sugar can cause winey or cidery flavors.
These recipes are for the Mr. Beer that makes 2-2 ½ gallons (1 case).
Any hop-flavored beer kit may be used with the Mr. Beer. Use one can and make it into 2 ½ or 3 gallons. This will make an all-malt brew.
Basic equipment needed:
1 hop flavored beer kit or 1 can plain malt, ½ oz hops and 1 pkg. yeast
3/8 cup priming sugar
1 pkg. C-Brite
1 case (24) 12 oz bottles and caps or 1 ½ cases (16) 16 oz EZ caps
capper (if using regular beer bottles)
5 ft syphon hose
1. Sterilize all equipment with C-Brite prior to use.
2. Bring 1 gallon of water to a boil in a stainless steel or enamel pot (no aluminum). Remove from heat, and add can of malt (set yeast aside for later).
3. Stir to dissolve the malt and let cool. - If using the plain malt, add the hops, and gently boil the liquid for 15 minutes after adding the malt. Let cool.
4. Add 1 gallon of water to the Mr. Beer container, then the cooled liquid (wort), filling according to the directions with the Mr. Beer.
5. Re-hydrate yeast in ½ cup lukewarm water, let stand about 10 minutes, then add to the container.
6. Let ferment for 5-7 days, then bottle using the original directions with the Mr. Beer.
