In Whole Muscle Curing, you`ll learn so much about curing that you`ll want to start making your own delicious pastrami and capicolla right away!  This class will give you all the info you need to cure:

  • Pastrami and Corned Beef - Brined and seasoned, pastrami is always a favorite steamed or smoked.
  • Capocolla - a traditional Italian cold cut made from a fine cut of pork - cured sweet or `hot` as some prefer!
  • Lonzo - a capicolla-like cold cut made of the lonzo muscle
  • Bresaola - a dried, salt-cured meat of Northern Italy, often aged for months
  • Proscuitto - The favored Italian delicacy served on sandwiches or with melon &  aged balsamic vinegar
  • Culatello and Fiocco - Similar meats to proscuitto, derived from the filet or loin. 
  • Duck Sausage and Sopressatta - Favorite dry-cured meats with loads of flavor and high-quality meats

Who may even get to sample some homemade cured meats that you can craft at the same high quality level at home!

Pre-registration is required due to limited class size and will be on a first come first served basis. Classes will be held at our Warehouse Store Location in Woburn Massachusetts.
* Advanced registration is required. Students may register up through the day of the class provided seats are available.
