Tanin FT Rouge offers the winemaker the possibility to add refined highly-bindable tannin to your wine at any stage. Benefits include increased structure and mouth feel, color stabilization, anti-oxidative qualities, and overall complexity. Tannins can reduce vegetal/herbaceous characteristics and perceived astringency.
Tannin FT Rouge is composed of both grape and wood tannins specifically formulated for use during red wine fermentation. These highly reactive tannins bind with anthocyanins in the first 3-4 days of fermentation. If sufficient natural tannins are not present in the must, anthocyanins may precipitate resulting in a loss of color. Using an enzyme like Lallyzyme EX in conjunction with Tannin FT Rouge can enhance this binding of color. However we do recommend adding the tannins 6-8 hours after the addition of the enzymes. The continual bonding going on throughout the ferment will also improve the mid palate structure and help significantly reduce or eliminate vegetal/herbaceous characters. Tannin additions at this early stage prove to be most efficient and are better integrated into the wine.
USE: Used in red wines for improved tannin structure increased color stability and will also improve mid-palate structure and help significantly reduce or eliminate vegetal/herbaceous characters.
WHEN TO USE: At crush or beginning of fermentation. If using an enzyme like Lallyzyme EX, Opti-Red etc. in conjunction with Tannin VR Supra to enhance the binding of color we do recommend adding the tannins 6-8 hours after the addition of enzymes. Gradually sprinkle Tanin FT Rouge directly on grapes at the crush or add to the must during a transfer.
DOSE: 1 package is good for 5/6 gallons.
