WLP025 Southwold Ale Yeast: From Suffolk County, England this yeast produces complex fruit, citrus, and spice flavors. Great for British-style bitters and pale ales. A slight sulfur note is produced during fermentation, but disappears with aging.
This is a Vault Yeast Strain and is only released April/May/June.
Attenuation: 68 - 75%

Optimum Fermentation Temperature: 66 - 69F

Each vial or pouch of White Labs liquid yeast is designed to be used directly in 5 gallons of wort, hence the term `pitchable yeast.` Each vial is equivalent in cell count to a pint starter or 75-150 billion cells. One vial will usually start fermentation in a 5 gallon batch in 5-15 hours at 70F. If a faster start is desired or if initial gravity is over 1.070 we recommend a 1-2 pint starter be made or add a second vial or pouch of yeast.
