Beer Brewing Classes

WLP026 Premium Bitter Ale Yeast: Coming from Staffordshire, England, the fermentation give a mild but complex estery character. Ferments strong, dry, and is good for high-gravity beers. Best for all English-style ales, including bitters, milds, ESBs, porters, stouts, and barleywines.

*This strain has been genetically typed at White Labs by using polymerase chain reaction (PCR). Through this genetic testing, we have determined WLP026 Premium Bitter Ale Yeast to contain the STA1 Gene (Glucoamylase), a potential indicator of Sacharomyces Cervisiae var. Diastaticus. This strain has the ability to utilize some dextrins (unfermentable sugars), resulting in a higher level of attenuation than what is considered "typical."

This is a Vault Yeast Strain and is only released April/May/June.

Recommended for: Ales

Attenuation: 70 - 75%

Flocculation: Medium

Optimum Fermentation Temperature: 67 - 70F

Alcohol Tolerance: Medium (5 - 10%)

Concerned about shipping? Don`t be! We ship all of our liquid yeast with ice packs.

Each vial or pouch of White Labs liquid yeast is designed to be used directly in 5 gallons of wort, hence the term `pitchable yeast.` Each vial is equivalent in cell count to a pint starter or 75-150 billion cells. One vial will usually start fermentation in a 5 gallon batch in 5-15 hours at 70F. If a faster start is desired or if initial gravity is over 1.070 we recommend a 1-2 pint starter be made or add a second vial or pouch of yeast.
