WLP073 Artisanal Country Ale Yeast: a classic Bire de Garde strain, it produces slight esters and mild phenols, while preserving the sweet aromatics from the malt bill. This strain fully attenuates, leaving the beer with a crisp, dry finish.

*This strain has been genetically typed at White Labs by using polymerase chain reaction (PCR). Through this genetic testing, we have determined WLP073 Artisanal Country Ale Yeast to contain the STA1 Gene (Glucoamylase), a potential indicator of Sacharomyces Cervisiae var. Diastaticus. This strain has the ability to utilize some dextrins (unfermentable sugars), resulting in a higher level of attenuation than what is considered "typical."

This is a Vault Yeast Strain and is only released July/August/September.

Attenuation: 75-80%

Alcohol Tolerance: Medium to High (8 - 12%)

Flocculation: Low to Medium

Optimum Fermentation Temperature: 70-82%F

Each vial or pouch of White Labs liquid yeast is designed to be used directly in 5 gallons of wort, hence the term `pitchable yeast.` Each vial is equivalent in cell count to a pint starter or 75-150 billion cells. One vial will usually start fermentation in a 5 gallon batch in 5-15 hours at 70F. If a faster start is desired or if initial gravity is over 1.070 we recommend a 1-2 pint starter be made or add a second vial or pouch of yeast.
