Guinness Brownies

There are so many recipes out there for St. Patrick's Day treats - but our favorite is Guinness brownies.

Guinness Brownies

  • 8 tablespoons (1 stick) butter
  • 1 1/4 cups sugar
  • 3/4 cup plus 2 tablespoons cocoa powder
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon vanilla
  • 3/4 cup Guinness Stout
  • 2 eggs
  • 1/2 cup plus 2 tablespoons flour
  • 2/3 cup semisweet chocolate chips

Preheat oven to 325°F. Line an 8x8 baking dish with two pieces of parchment paper, cut to fit, so that they overlap and cover the bottom with an overhang on each side.

In a large microwave-safe bowl, combine butter, sugar, cocoa powder and salt. Microwave on high in 30 second increments until butter is melted and mixture stirs together easily. Add the vanilla and Guinness, and mix until smooth. Whisk in the eggs. Add the flour and whisk until the batter is thick and shiny. Stir in the chocolate chips. Pour into prepared pan and bake for 25-35 minutes, until a toothpick inserted in the center comes out with moist crumbs attached. Cool completely.

Frosting

  • 4 ounces (1/2 package) cream cheese
  • 2 cups (or more) powdered sugar
  • 2 tablespoons Guinness Stout

Beat cream cheese in a large bowl until smooth. Add the Guinness. Add sugar in increments, beating after each addition until smooth, and desired consistency is reached.

Frost cooled brownies with frosting, then chill in the refrigerator.
