Premier Cuvee: Fast clean neutral fermenter. Able to ferment in a wide temperature range and be free of sulphur dioxide. Ferments to drynes. Neutral strain allowing varietal aroma expression of Chardonnay and Pinot Noir. Produces characteristic aromas of the Champenoise method: breadcrust hazelnut and butter. Well adapted for the production of dry white wines such as Chardonnay Pinot Blanc and Pinot Grigio.
